Dump the Box: Chewy Fudge Brownies

One of my favorite treats is delicious chocolatey chewy brownies. There’s something about the combination of chocolate, chewiness and the rich flavor that makes my legs go to jelly each time.

In my 20s, I went through a phase where I got really get freaked out by how many preservatives we were consuming and I decided I wanted to start making all my favorite baked foods from scratch – including brownies.

However, after dozens of failed attempts, I just could never get it right. They were either too cakey, too wet, too dry, or just didn’t have a satisfying texture that a good ol’ box of Duncan Hines could provide. It seemed to be that brownies would forever be my white whale.

So I finally gave in and decided that maybe perfect from-scratch brownies were just a pipe dream and that I’d just have to resort to box brownie mixes for the rest of my life… until today.

This recipe is not only super-easy but get this, everything gets mixed in ONE saucepan – talk about easy cleanup!


Chewy Fudge Brownies

Brownies

Makes 16 brownies (depending on how you cut them)

INGREDIENTS

  • 1 cup (2 sticks) butter
  • 1 1/2 cups sugar
  • 1/2 cup Nutella
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 1/4 cups cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cups all-purpose flour
  • 1 cup bread flour
  • Optional: nuts, chocolate chips, marshmallows, or whatever else you want to add in

DIRECTIONS

  1. Preheat oven to 350 degrees F (180 degrees C).
  2. Grease a 9×9 baking pan.
  3. Add butter to a saucepan and melt butter over low heat.
  4. Add in sugar and continue with low heat, stirring until sugar is evenly incorporated.
  5. Turn off the heat, and mix in the Nutella (may be a bit lumpy – don’t worry).
  6. Add cocoa powder, eggs, salt, baking powder, flour, vanilla extract and any add-ins you want. Mix until even.
  7. Pour brownie batter into the greased baking pan and use a spatula to even out the surface.
  8. Bake for about 30-35 minutes. Like box brownies, the edges will be a little harder than the center. Leave the brownies in a pan and cool completely before cutting and serving.
